Breakfast - Goat's Cheese with Mushrooms & Spinach

Saute 100g of spinach and mushrooms in a little coconut oil and melt over 50g goat's cheese. Can switch vegetables to use butternut squash or bell peppers instead. Serve on rye bread toast.
