Courgetti and FETA

This is a SUPER QUICK - nutritious fast food, perfect for those times when you only have 5 minutes to prepare a meal. It's delicious too and Metabolic Balance compatible!


What you need: cheese (preferably feta), onion, courgetti (can be shop bought!), vegetable stock, rocket, garlic and oregano.


Fry the onions and garlic in some oil, add a little stock, then add the courgetti. After cooking for a few minutes crumble in the feta cheese and a sprinkle of oregano and sea salt. Place in a bowl and top with rocket
