Quick Tortilla

This potato tortilla recipe is part of my '28 Day Metabolic Reset' Plan. It is very simple and easy to throw together. It also has plenty of protein from the eggs, combined with coloured vegetables and carbs from the sweet potato. A winning combination!
Here is the recipe:
Cook the potato: Thinly slice a sweet potato and sauté in olive oil for 6-7 mins until soft and lightly golden.
Add the veg & eggs: Stir in cherry tomatoes + a handful of greens (spinach/kale) to wilt, then pour over 2-3 whisked eggs with salt & pepper.
Finish the tortilla: Cook on low until cooked through
