This Shakshuka recipe makes a delicious, high protein lunch or weekend breakfast.
I cooked some garlic, spring onions and sliced peppers in some olive oil, then added tomato paste, chopped tomatoes and spinach. Once everything is cooking nicely, make two holes and break an egg into each hole. Cover with a lid and cook for a few more minutes until the eggs are cooked. Then pile on some sliced avocado. It's quite an easy one and ever so YUM!
It's really sustaining as it is but you can bulk it up with some linseed bread or sourdough :)
